If you have lived near Cherry Creek North for more than a couple of years, you have watched the same corner of the Clayton Hotel & Members Club become a different restaurant so many times that the pattern itself became the story. A speakeasy became a piano bar became nothing at all. A hotel bar became a caviar counter became a jewel-toned lounge became a Spanish wine bar became, this past July, a tequila cantina. As 5280 reported, the Clayton's three public dining spaces have cycled through eleven separate concepts since it opened in 2021. That is not a slow year for one restaurant. That is a different restaurant almost every few months, for five straight years, inside a building that never changed owners or lost its five-star ambitions.
Here is the part that does not fit the easy explanation. One current concept inside that same hotel has remained in place since it opened. It is the main dining room's third concept, after two earlier names. The contrast among those concepts is not about food quality or budget. It is about whether the room asks something of the person walking in.
Three Spaces, Eleven Names
The turnover breaks down by room, and the pattern is easiest to see laid out side by side.

The main dining room only has three names on it, and the third one has stuck.
The One Room That Asks Something of You
That third name is Alteño, chef Johnny Curiel's Jalisco-inspired dining room, and it has remained in the main dining room since it opened. Curiel already had Michelin-starred credibility from Alma Fonda Fina and Mezcaleria Alma in LoHi before he took over the Clayton's main room, and Alteño has stayed his and stayed put. It runs dinner service seven nights a week with a weekday happy hour from 3 to 5 p.m., and reservations are recommended rather than optional, which tells you something about demand.
What Alteño is not, and what its two predecessors also were not built to be, is a room you wander into. It sits inside a private members club, built around storytelling and a specific culinary point of view rather than general foot traffic off the sidewalk. Of a Kind and Kini's preceded Alteño in the main dining room. Alteño is the current concept there.
Before Tequilería Alteño opened, the lobby bar had hosted four concepts: Oak Market, Cretans, Bar Amorina and Mar Bella Wine Bar. Mar Bella was pitched as a Spanish neo-bistro and wine bar. Curiel has said the space needed something with more energy, not more polish.
The Rooftop Opens Its Door for the First Time
The sixth-floor lounge tells a version of the same story from the other direction. Five Nines and Chez Roc were members-only concepts, and the space was vacant before SHEEP opened to the public. In July 2026, for the first time since the hotel opened, that room opened to the general public. Chef Kelly Whitaker of Id Est Hospitality, the team behind The Wolf's Tailor, Colorado's first restaurant to earn two Michelin stars, took over the space for a four-course tasting menu residency called SHEEP, built around open-fire cooking and seasonal Colorado ingredients.
SHEEP has a firm end date of October 4, 2026. If you have been meaning to see what a public night on the Clayton's sixth floor actually looks like, you have under four weeks left before that particular door closes again, and there is no announced plan for what replaces it.
Loud Instead of Polished
The lobby bar's newest attempt goes in a different direction entirely. Tequilería Alteño, which opened July 8, 2026, in the space Mar Bella left behind, is built around a casual, high-energy cantina concept. Curiel has described wanting the room to bring energy the way the neighborhood's later-night spots like Forget Me Not and Ay Papi do, and has talked about eventually redoing the space with a jukebox, a margarita bar and paper plates if the pop-up format proves itself out.
The masa program behind Tequilería Alteño's menu comes through Curiel's partnership with the Masa Seed Foundation, a Boulder-based project working to bring heirloom Mexican corn varieties back into circulation in Colorado kitchens, all of it nixtamalized in house rather than bought pre-made.
Mar Bella was presented as a slightly more casual sibling to Alteño, curated and quiet. Tequilería Alteño takes a different approach: a louder, walk-in format, while Alteño is intimate and reservations are recommended. Whether that version sticks is still an open question this early into its run, but it is a different bet than any of the four concepts that came before it in that same room.
What This Says About the Block
Curiel has talked about looking around Cherry Creek North and seeing a neighborhood full of construction and change, and reading that as a sign the area is worth staying in rather than worth leaving. The restaurant history inside his own building reflects that change. The hotel's three spaces have hosted a range of formats, from members-club dining to a public rooftop residency and a cantina pop-up.
